
The skin of Ang Ku Kueh is made from glutinous rice flour, mashed sweet potato, water , food coloring and with green beans filling in the center.
INGREDIENTS:
make 30 pcs , mould size 5 x 8 cm
Green Bean Filling
- 300 g split green bean ( washed and soaked for 6 hours)
- 200 g fine sugar
- 4 tablespoons oil
Method
- Steam green bean over boiling water for 30 - 40 minutes till soft.
- Blend or mashed green bean till become a paste.
- In a wok , combine green bean paste , sugar and oil . Stir on low medium heat till thick and do not stick to your hand.
- Cool it and shapped into 30 balls of about 20 g. ( The size of filling will depend on the size of your mould ).
Ang Ku Skin
- 1/8 tsp red coloring
- 150 g sweet potatoes
- 400 g glutinous rice flour
- 2 tbsp corn flour
- 3 tbsp corn oil
- 250 ml boil water
- 3 tbsp castor sugar
Method :
- Put sifted ingredients and sugar in a large mixing bowl.
- Make a well in the center , add mashed sweet potatoes , corn oil and colored water. Mix and knead into a shiny and pliable dough.
- 1 banana leaf , cut into rectangle to fit the ang ku mould.
- 3 tbsp oil .
- Lightly grease the cut banana leave with oil .
- Divide skin dough into 30 pcs . Flatten each dough into 1/4 inch thick and wrap the filling inside . Roll into a leave.
- Lightly dust the ang ku mould with glutinous rice flour ,for easy to remove the ang ku kueh or u may also grease with corn oil. Press the dough ball into the mould and lightly knock it out .
- Place ang ku kueh on the banana leaf .
- Arrange ang ku kueh on steaming tray and steam for 10 minute , over medium low heat till cooked ( do not steam over high heat to prevent it turned out of shape .Once done , remove from steamer .
